Coconut Date Balls
Ingredients:
1 8oz dates chopped
1/2 cup light brown sugar firmly packed
1/2 cup chopped pecans or walnuts
2 eggs
1 tsp vanilla
2 cups rice krispies cereal, can be the holiday kind
3/4 cup coconut, sweetened or unsweetened
Stir together first 4 ingredients in a medium saucepan. Cook over medium heat for about
8 minutes, or until its thickened and beginning to simmer. Take off the heat and stir in the vanilla and rice krispies till combined. When cool enough to handle rub butter on hands and roll into balls and roll in coconut. Enjoy.
