Northern Blueberry Pie
4 cups blueberries
1 T butter or margarine
1 cup white sugar
9 inch cooked pie shell
3 T cornstarch
1/4 tsp salt
OPTIONAL TOPPING
1 cup whipping cream
1 cups water
3 T icing sugar
1/4 tsp almond extract
Wash blueberries and pat dry, place 1 cup berries in saucepan and chill the remainder of berries in fridge. Add to one cup of berries in saucepan: sugar, cornstarch, salt and water cook this mixture, STIRRING CONSTANTLY, over low heat until it is thick and smooth.
Remove saucepan from heat and add the butter (or margarine) do not stir it in - let it cool until the butter melts. When butter melts, add the chilled berries to the warm mixture. mix all well. Spoon this into baked pie shell.
Cool in fridge for 30 minutes
OPTIONAL TOPPING
Mix 3 topping ingredients together. Serve pie with this option topping or with vanilla ice cream.
