Pear & Port Glaze for Turkey
Ingredients:
4 cups pear nectar
2 cups Tawny Port
1/2 cup unsalted butter
1/4 cup honey
1 1/2 tsp minced fresh sage or 1/2 tsp dry sage
Combine and boil all ingredients in heavy large saucepan until reduced to 2 cups (about 40 minutes). Can be prepared 1 day ahead - cover/refrigerate. Baste turkey with glaze, repeating every hour. Add remaining glaze to gravy. Produces a rich and robust flavour.
